The fragrance is dominated by a floral orange scent, with tangy chocolate and lemon bitterness in the aftertaste. Molino de Santa Rita comes across a well balanced coffee. Traditionally wet processed and sun dried, this bourbon cultivar gives a compact and well-structured flavour profile. It's not flashy and attention seeking (you know the type), this has depth and lasting appeal, like a good friend.
The Carmen estate is on a very steep hillside with southern exposure, and due to the high altitude, the coffee has greater density, better acidity, and is a more piquant cup. Altitude isn't the only factor that matters with coffee but it does allow coffee to ripen slowly and creates greater bean density. Density and slow maturation are important factors in cup quality. This coffee is more about the syrupy body than bright, piquant flavours. The dry fragrance has a blunt and bold brown sugar sweetness. There are still accents of clean vanilla, malt, a zest of orange rind and a trace of warming spices in the finish. Oh baby!
Earthy and brooding with a classic Indonesian flavour profile. More pleasing savory bitterness than sweetness, deep sandalwood and forest floor notes, a coffee profile painted in Autumn shades with a black pepper spike in the finish. A real winter warmer.
